The burger gets all the headlines. But ask anyone who's polished off a cone of our fries: the side dish has something to say, too.

It’s easy for fries to go unnoticed on a burger joint’s menu. Almost everyone expects them to be there, but few people wonder where they come from. At La Suculenta, we make our own fries from scratch and cut them by hand—using real fresh potatoes, not frozen ones from a bag—following the same philosophy of “paying attention to the little details” that we apply to every burger we make.

Why Cut Them by Hand?

The difference is made before they go into the fryer

Frozen bagged potatoes come pre-cut, blanched, and sometimes coated with some kind of starch so they turn out crispy with minimal effort. It's fast, it's convenient, and it's what the vast majority of fast-food restaurants do.

Cutting them by hand every day means exactly the opposite: someone in the kitchen is responsible for turning fresh potatoes into fries ready for frying, batch by batch, before each service. It’s more work and less predictable—every potato is different—but it’s the only way to ensure they taste like real potatoes, not like a product designed to be identical in any deep fryer in the world.

It's not the part of the menu with the most photos. But it's the part that reveals most quickly whether a place has gone to the trouble of doing it right—or not.

The Little Details

That’s what we’ve written on our kitchen aprons, and it’s not just a decorative phrase. At Smash Burger, the attention to detail is in how the patties are cooked on the grill; with the fries, it’s in cutting them by hand instead of opening a bag. Neither of these things can be fully explained—you have to try them for yourself.
