The window is short: just a couple of minutes per side. If you press it too late, or use meat that isn't fatty enough, you'll lose exactly what makes a smash special: that crispy edge that cracks when you bite into it.

No pre-frozen meat or industrial processes involved: the meat arrives, is weighed, shaped into patties, and pressed onto the griddle once the order is in the kitchen.

It's a decision that takes more effort than the easy alternative, but it's the only way to get that crispy crust and juicy center that make a smash burger worth it.
